  • 1/2 bell pepper, cut into small cubes
  • 1 carrot, finely chopped
  • 1/2 teaspoon of salt
  • 3 sausages, cut into small pieces
  • 4 fresh eggs
  • 50ml of milk
  • 1/2 teaspoon black pepper
  • Chopped fresh parsley
  • 50g grated mozzarella cheese.
  • Preparation :
  • Start by melting the butter in a skillet over medium heat. Add the onions and fry until lightly browned. Then add the carrots and peppers, without forgetting a pinch of salt and black pepper. Brown these vegetables until they are tender, to release all their aromas.
  • In a large bowl, beat the eggs with the milk. Season with the remaining salt and pepper. Gently fold in the vegetable mixture and sprinkle with chopped fresh parsley. The latter will add a herbaceous touch which will awaken the flavors of the dish.
  • In a previously greased muffin mold, place the sausage pieces at the bottom of each compartment. Pour the egg and vegetable mixture over it, then sprinkle generously with grated mozzarella. The latter will act as a cheese covering which will melt deliciously when cooked.
  • Preheat your oven to 180°C (360°F). Then bake your muffins for 20 minutes, or until they are golden brown and the cheese is melted and slightly crispy.
  • Tips and tricks:
  • For an even more delicious side, do not hesitate to add sautéed mushrooms or aromatic herbs of your choice.
  • If you want to store them, place the cooled muffins in freezer bags and freeze them. To enjoy them, simply reheat them in the oven for a few minutes.
  • When it comes to wine and food pairings, a glass of fresh orange juice or a robust black tea would be ideal to accompany these tasty muffins.
  • In conclusion,  these muffins are the perfect embodiment of an English breakfast, rich in flavors and textures. Their nutritional benefits, combined with their delicious taste, make them an ideal option to start the day right.
