White sauce with bacon is one of the most traditional pasta recipes and really pleases the palate. Especially here at home, people love it. Your recipe needs a bit of agility to keep it from getting overcooked, but the result is totally worth it.

Ingredients:
200 g spaghetti (or other pasta of your choice)
½ cup diced bacon
¼ cup of white wine
2 eggs
2 egg yolks
½ cup grated parmesan cheese
Salt and black pepper to taste
Method of preparation:
Place a medium pan with 2 liters of water over high heat. When it boils, add 1 tablespoon of salt, add the pasta and mix. Let it cook for the time indicated on the package or until it becomes burning.
Meanwhile, in a small bowl, break one egg at a time and transfer to another bowl, then add the grated cheese and beat well with a fork to mix.
In a large frying pan over medium heat, brown the bacon for about 5 minutes, stirring occasionally. Reduce the heat, add the white wine, being careful not to splash it, mix well and turn off the heat.
After cooking the pasta, reserve 1 cup (tea) of the cooking water. Then quickly drain the water, transfer the pasta to the frying pan with the hot bacon, add the eggs and mix well – the idea is that the heat from the pasta cooks the eggs, forming a cream.
Return the frying pan to a very low heat and gradually add the reserved cooking water, stirring with a spatula for a few minutes until a sauce forms.
Then it’s ready to serve, you can add black pepper to your taste.
