Apple cinnamon and vanilla biscuits that melt in your mouth!
The ingredients
We need these ingredients:
two apples; a pinch of cinnamon; a spoonful of butter; a spoonful of lemon juice; 125 g of butter; 125 g of sugar; 100 ml of oil; an egg; vanillin; a pinch of salt; 350 grams of flour; 6 g of baking powder for desserts.
The preparation
Start by placing 125 grams of butter at room temperature in a large bowl. Add 125 grams of sugar, 100 milliliters of oil, an egg, vanillin and a pinch of salt. At this point mix everything together with a spatula. Mix well until you obtain a creamy mixture. At some point we will change the spatula to a hand whisk.
Now add the 350 grams of flour to this light colored cream: as usual we will pour it in a little at a time and mix with a spatula between one addition and another. At a certain point we pour in the baking powder and start kneading with our hands. We stop when we have a smooth and elastic ball.
Now we turn to apples. We cut them into slices and then grate the slices into a pan. We pour over the lemon juice, butter, honey and ground cinnamon, then we bring the pan onto the heat and let it cook for five or six minutes, stirring with a spoon.
At a certain point we pour two spoonfuls of grated almonds over the apples and mix again.
Now we take the above dough and roll it out with a rolling pin on a floured pastry board. When we have a sheet of dough about half a centimeter thick, we trim the edges to give it a more or less rectangular shape and then we cut this rectangle into three strips. Now place the mixture with the apple on each of these strips, along the length of each strip of dough.

Now we close the dough around the apple to make a long “cannoli” (three long cannolis, actually). We pinch the dough on the edge to seal them

Then we cut our biscuits with a knife and arrange them in good order on a baking tray lined with baking paper.

At this point all that remains is to put it in a preheated oven at 180 degrees for 15/20 minutes.
When they are cooked we brush them with jam and then sprinkle some sugar on top.
