Courgette rolls stuffed with ham and cheese: an economical and delicious recipe for Christmas

  • 2 large courgettes;
  • 145 g of fresh cheese;
  • 75 g of grated cheese;
  • 100 g of cooked ham;
  • 150 ml of tomato puree;
  • 1/2 onion;
  • Olive oil ;
  • Salt.

Step 1:

Wash the courgettes then cut them into thin slices. Pour a drizzle of oil into a large pan. Then take  8 slices of courgettes, the thickest ones, and cook them briefly for about 1 minute per side  , before removing them from the pan and setting them aside. Finally, cut the rest of the courgettes into cubes and set them aside.

Step 2:

Dice the onion and place it in the pan where you cooked the courgettes and brown it over a high heat. After a minute,   add the diced courgettes to the pan and season everything  to taste (salt, pepper, garlic, etc.) and cook for 15 minutes.

Step 3:

Cut the cooked ham into cubes before placing it in the pan. Let  the onions and courgettes cook for 1 or 2 minutes, then remove the pan from the   heat  . Then add the cream cheese and mix everything together. Your filling is now ready!

Step 4:

On a work surface, arrange the cooked courgette slices and arrange the garnish. Then roll each sheet from end to end to close. Once you have rolled up all the courgette slices,   cover them with tomato sauce and grated cheese before baking them for a few minutes  .
