
Light apple biscuits, without egg and butter: 3 quick recipes!
Ingredients for the first proposal: biscuits with oats and chocolate chips
- 75 grams of oat bran,
- 75 grams of oat flakes
- 20 grams of stevia,
- 50 grams of plain yoghurt 0 fat or max 5%,
- 200 grams of blended apple,
- half a spoonful of cinnamon,
- 1 tablespoon grated lemon peel,
- 1 tablespoon instant yeast powder,
- 1 sachet of vanillin
- a handful of dark chocolate chips
Preparation
There is nothing simpler than making these biscuits. We simply have to mix all the ingredients together. We can use a spatula, a whisk or even simply our hands. The important thing is to be able to create a lump-free dough. Once obtained, take portions with a spoon, place them on a baking tray covered with baking paper and flatten them, so as to give them a round shape.
Bake in a hot oven, fan mode, central shelf, at 190° for 30-35 minutes.
Our first proposal is already ready.
Ingredients for the second proposal: light and soft apple biscuits
- 150 grams of type 1 flour,
- 1 apple,
- 40 grams of oil,
- 1 jar of sugar-free plain yogurt,
- half a spoonful of cinnamon,
- 1 tablespoon grated orange peel,
- 1 tablespoon instant yeast powder,
- 1 sachet of vanillin,
- 2 tablespoons dark chocolate chips
Preparation
Peel and cut the apple into cubes, place it in a non-stick pan together with the cinnamon and two tablespoons of stevia. Cook over a moderate heat with a lid for 15 -20 minutes, until the apples soften. When they are ready, let’s keep them aside for a moment and dedicate ourselves to the dough. Place all the ingredients in a bowl, save the flour for last, adding it little by little only when the other elements are perfectly blended. Knead until you obtain a smooth and homogeneous dough. Only at this point will we insert the previously cooked apples.
Divide the dough into portions and place them on a baking tray covered with baking paper. We work the portions to create balls and then flatten them to give a circular shape, place an almond in the center and bake in a hot oven, fan mode, central shelf at 180° for 35-40 minutes.
The second proposal is also done, soft and delicate will win us over.
Ingredients for the third proposal: apple-filled biscuits
- 250 grams of type 1 flour,
- 40 grams of stevia,
- 1 apple,
- 40 grams of seed oil,
- 1 jar of sugar-free plain yogurt,
- half a spoonful of cinnamon,
- 1 teaspoon grated orange peel,
- 1 tablespoon instant yeast powder,
- 1 sachet of vanillin.
Preparation
We prepare the apples as in the previous recipe. Also in this case let’s keep it aside for a moment. We put all the remaining ingredients in a bowl and knead until we obtain a rather compact dough without lumps. Using a rolling pin we roll out the dough to a thickness of a couple of millimetres, with a pastry cutter or a glass we form circles. Place a few pieces of cooked apple on each circle and cover with another circle of dough. We seal the edges well. Place them on a baking tray covered with baking paper and bake in a hot oven, central shelf, ventilated mode at 180° for 35-40 minutes.

Some variations of light apple biscuits
These three recipes are really delicious as they are but can lend themselves to some variations:
- 0.00 or type 2 flour instead of type 1,
- 55 grams of sugar for the first proposal and 85 grams for the other two instead of stevia.
- We can always use honey or maple syrup to replace stevia. 45 grams for the first biscuits, 70 grams for the other two.
- Again, instead of the sweetener, agave syrup can be used, 40 grams for the oat biscuits, 60 grams for the other two proposals.
- Yogurt can be of any type.
- Finally, you can replace the chocolate chips with goji berries.
