How to prepare shrimp in a puff pastry crust:
Step 1
Gently peel off the shrimp heads

Remove the shell leaving the tail

Using a wooden toothpick, remove the dark filament from the intestine

Wash the prawns well under cold running water and dry them with absorbent paper.

Transfer the prawns to a container and add a drizzle of oil

Squeeze the juice from half a lemon

Season with a pinch of salt

Mix well and leave to rest for a few minutes in the refrigerator.

Cut the dough into strips about 1cm thick.

Dry the shrimp on a paper towel to remove excess seasoning.

Gently roll a strip of puff pastry around the shrimp

Try to overlap the dough so as not to leave any gaps.

Place the prawns on a baking tray lined with baking paper.

Beat an egg in a bowl.

Brush the shrimp with the beaten egg.

Sprinkle the surface with sesame seeds and bake at 190°C for 20 minutes, in static mode.

Once golden, remove the prawns from the oven and serve immediately
