  • 460 grams of puff pastry (two packs)
  • 150 grams of bacon already cut into pieces
  • 250 grams of scamorza
  • 70 grams of julienned carrots
  • 80 grams of grated parmesan
  • extra virgin olive oil to taste
  • An egg
  • A shallot
  • Butter to taste (you will need a little more to grease the pan)
  • Black pepper and fine salt to taste.

With the doses indicated you can make a rustic cake for up to four people.

How to cook a rustic cake in a pan

After slicing the shallot, let it fry in extra virgin olive oil. When the shallot is golden, first add the julienned carrots, seasoning them with black pepper and salt, and after about 5-7 minutes, add the bacon.

Bake the rustic cake

Melt a little butter in a saucepan and spread it over the bottom of a pan with a pastry brush. Place the puff pastry in the pan, keeping half of it and make some holes with a toothpick or fork.

Cut the scamorza into cubes and insert it with the rest of the ingredients and place them on the puff pastry in the pan. Break the egg into a bowl and beat it lightly with a fork, then pour it into the pan over the rest of the filling. Sprinkle everything with grated parmesan and cover everything with the other roll of puff pastry.

Roll the edges on themselves to make them stick, pierce the dough and brush with the melted butter that you previously melted. Cover the pan and cook over very low heat for about ten minutes. Using the lid, turn the cake over and wait a further ten minutes until it is completely cooked.
